Every bite tastes like the inside of a homemade chicken pot pie. Rich, creamy, and cozy. ❤️ Your spoon will be full of comforting, flakes of chicken, potatoes bites, and little veggies. It’s the kind of soup that’s easy to make and it comfortably steams up the kitchen and fills the house with the smell of dinner after a cold day.
I said comfortably there a lot… I think this is my comfort soup LOL.
I hope no one minds, I replaced the ‘pie’ with a slice of sourdough bread.
Chicken Pot Pie Soup
1/8 cup butter
3 stalks celery, diced
2 carrots, peeled and diced
2 cleaned potatoes, 1” cubes, leave skin on
½ onion, diced
2 tsp oregano
Salt and pepper to taste
¼ cup flour
½ cup white wine (I go pinto grigio)
6 cups of low sodium chicken broth
2 cans of condensed cream of chicken soup
3 cups of shredded chicken, cooked
¼ cup fresh parsley
Melt the butter into a large pot or Dutch oven over medium heat. Add vegetables and spices. Sautee vegetables until tender (3-4min).
Add flour and stir until blended, cook for 1-2 minutes.
While continuing to stir, add in the wine, chicken broth, and cans of soup. Stir until smooth.
Add the chicken and fresh parsley.
Let soup simmer for 30 minutes.
Serve hot with a slice of fresh sourdough bread (optional)
