Saving that $4 for a bag of croutons adds up!

Why pay money for stale bread when you have everything at home to make it yourself? Croutons are a staple in our household all year round for both salads and soups.

I was determined to recreate the PC brand Caesar salad croutons because they have the perfect texture and flavour.

I came across a promising recipe in “The Best American Classics” recipe book. I think I picked this book up shortly after college when I was working as a Pastry Chef at Saint Mary’s University. It was recommended to me by a colleague who used it like a bible. It’s a collection of 300 ‘exhaustively tested’ recipes for America’s favorite dishes.

Buttered Croutons (approx 3 cups)

6 slices of white bread, crusts removed and sliced into 1/2-inch cubes

Salt and pepper to taste

3 tbsp unsalted butter, melted

  1. Adjust an oven rack to the upper-middle position and preheat oven to 400 degrees F. Combine bread cubes and salt & pepper to taste in a medium bowl. Drizzle with the butter and toss well with a rubber spatula to combine.

  2. Spread the croutons in a single layer on a rimmed baking sheet or a shallow baking dish. Bake the croutons, turning at the halfway mark, until golden brown and crisp, 8-10 minutes. Cool and store croutons in an airtight container or plastic bag for up to 3 days.

Modifications

  • Since I wanted to recreate the PC brand Caesar salad croutons, I added in a generous amount of garlic powder along with the salt and pepper.

  • I made triple the amount of croutons as the above recipe called for so they did not sit in a single layer on the pan. This did increase the baking time to 24 minutes, stirring after every 8 minutes.
